This Programme has been developed in response to the significant labour shortage in the hospitality industry. New Zealand has seen an increased demand for skilled staff to unprecedented levels. This Certificate in Food and Beverage Service will provide individuals with the skills they require to gain entry level employment in the hospitality industry.
The Food and Beverage Certificate offers four pathway options. A student must select one of these four strands:

Successful graduates of the Programme may also staircase to other hospitality programmes or apply to a suitable Level 4 programme, either at NZSE or another tertiary provider.

Students will become familiar with food safety, and health and safety (H&S) practices as applicable in a hospitality environment. The application of security, policies and procedures will also be discussed, including how learners can mitigate any potential hazards, for both their own and their customers' safety.
Students will learn how to communicate effectively when serving customers, and behave in a professional manner with colleagues, managers, and customers. The importance of following standard operating procedures and policies in a hospitality workplace is also covered.
Learners will gain the knowledge and skills to prepare and serve food and beverage in a café environment.
Leaners will gain the knowledge and skills to prepare, use and maintain a commercial espresso coffee machine in a café environment. They will be able to prepare and present a range of espresso beverages for customers.
Learners will develop the knowledge and skills to deliver professional customer service in a café environment. They will also learn effective communication strategies and apply relevant procedures for handling customer enquiries, requests and complaints.
Learners will learn a range of barista skills relevant to a café environment including:
- Accurately taking espresso coffee orders from customers.
- Preparing and presenting a range of espresso coffee for customers.
- Demonstrating espresso presentation techniques including latte art.
Leaners will gain the knowledge and skills required to provide and maintain buffet service and beverage service for in-house functions and other settings. Learners will also gain an understanding of the catering requirements essential to organise and manage a professional buffet experience at an in-house function.
Building on the above to courses, learners will further develop the knowledge and skills required to successfully provide a professional buffet experience for in house functions. The course covers all aspects of buffet service including planning, set-up, service delivery and break-down post service.
Learners will gain the knowledge and skills required to successfully plan, set-up and manage a buffet service for in-house functions and events. This course also covers the health and safety, food safety and security practices that are relevant to buffet service.
This course focuses on the key factors required to successfully deliver a buffet service experience. Learners will gain essential knowledge and skills into the various aspect of buffets and functions including:
- Service equipment
- Menu planning including dietary requirements
- Staffing
- Types of events
- Décor
- Health and safety
- Programme: entertainment, music, speeches, buffet service etc

This course introduces learners to quick service restaurants, (e.g.: McDonalds) and develops the knowledge and skills required to deliver professional food and beverage service in a fast-food setting. The course focuses on critical aspects of quick service delivery including processes, food safety, customers service, effective communication, and health & safety.
This course introduces the learner to the standard a la carte restaurant in contrast to a fast-food restaurant. Learners will develop the knowledge and skills required to deliver professional food and beverage service in a typical restaurant setting with a particular focus on front of house processes, health, safety, and security.
Leaners will develop the knowledge and skills required to provide professional customer service in a Quick Service Restaurant. Course content focuses on:
- Staffing, training, and induction
- Service blueprint: processes and procedures
- Menu knowledge and upselling
- POS systems
This course explores the importance of customer service in restaurants and explores the multiple factors that influence the customer experience including menu style and presentation, product knowledge, communication, pricing, staff presentation, payment options, service-scape etc.
Learners will gain the knowledge and skills required to work in a bar environment including:
- Product knowledge of wine, beer, spirits, liqueurs, and non-alcoholic beverages
- Preparing and serving a range of alcoholic & non-alcoholic beverages in a bar environment.
- Responsible food service in a bar environment
Learners will also be introduced to the unit standards required to gain their LCQ qualification (NZQA 4646 and NZQA 16705). These unit standards are completed in the HOSP3016 Bar Services paper
The aim of this course is for learners to develop the professional knowledge and skills to ensure the safe sale and supply of food and beverage in a licenced premise.
Learners who successfully complete this paper will gain the two-unit standards required to obtain their Licensed Controller Qualification (LCQ). LCQ is the qualification required to apply for a Managers License.
The two NZQA unit standards include:
- NZQA Unit Standard 16705: Demonstrate knowledge of host responsibility requirements as a duty manager of a licensed premises This unit standard is for people who are responsible for managing a licensed premise. Learners who successfully complete this unit standard will be able to demonstrate knowledge of alcohol and intoxication on licensed premises; understand the responsibilities and requirements for alcohol service in licensed premises; and have sound knowledge of various strategies for maintaining a safe drinking environment.
- NZQA Unit Standard 4646: Demonstrate knowledge of the Sale and Supply of Alcohol Act 2012 and its implications for licensed premises This unit standard is for people who are responsible for the sale and supply of liquor, and who require knowledge of the requirements and implications of the Sale and Supply of Alcohol Act 2012 for day-to-day operations.
